Spinach is one of the healthiest foods around. Another dark green vegetable that is chocked full of vitamins and minerals, including iron. Iron is a key component of hemoglobin – it will get your blood moving. If your blood is moving, then it will repair the skin. This is a great ingredient for several skin conditions. Spinach is a free radical fighter!
Do you have acne? Adding spinach to your diet on the regular can help prevent breakouts altogether. Vitamin K keeps the skin clear, reduces inflammation and enhances blood circulation. It can also help improve the appearance of dark under-eye circles. Then we have Vitamins A and C which work to repair skin cells, boost collagen production, and improved elasticity – keeping your complexion youthful and glowing. Spinach’s water content helps maintain skin hydration.
Recipe:
Spinach & Roasted Cauliflower Salad
I like to make the cauliflower ahead and toss in the fridge until we are ready to eat.
Ingredients:
1 cauliflower, small head, chopped
4 tbs olive oil, divided
2 ½ oz baby spinach
3 scallions, chopped
1 tsp Dijon mustard
1 tbs red wine vinegar
½ cup shredded parmesan cheese
Preheat oven to 375. Place cauliflower in baking dish. Add half of oil, season with salt & pepper and toss to coat. Bake for 20 minutes until just tender. Remove and let cool.
Mix spinach, scallions, and cauliflower in a bowl. Combine the remaining oil, mustard, and vinegar. Pour over veggies. Toss to coat and sprinkle with parmesan cheese.
