The liver is vital for skin health. In fact, both your skin and liver work to detoxify the body – so we want to make sure they work well together. Your skin can end up being a holding place for toxins that the body isn’t able to eliminate through its usual pathways of the kidneys and liver. A great example of this is how our skin feels after a night of drinking. Too much of a good time might lead to inflamed, congested, overly sensitive, and dry skin. Beets are perfect for liver + skin detox!
Beets are a great way to recover from over-imbibing. This is because beets contain betalains (it’s what makes the beets red) that boost liver function. Beets also contain pectin, a soluble fiber, which helps flush the system and gives your lymphatic system a kick-start. Rich in vitamins and minerals, beets help support collagen production improving your skin’s elasticity.
Recipe:
This is one of my favorite spring recipes shared with me by my next-door neighbor. All you do is toss the ingredients together.
Barley, Fennel, and Beet Salad:
2 cups of cooked barley (from about 2/3 cup dried)
1 thinly sliced fennel bulb
2 thinly sliced beets (I do not cook these; trust me they are amazing)
½ thinly sliced red onion
¼ cup chopped toasted almonds
¼ cup torn fresh mint
3 tbsp red wine vinegar
¼ cup olive oil
Season with salt and pepper
